Eggs are my favorite breakfast. I am always looking for new opportunities to serve them. These holiday cheese breakfast stacos give a classic meal a unique shoot. Once you’ve tried them, you will understand why you have become one of my new favorite breakfast.
These tacos contain four of my favorite ingredients that mix with eggs: onions, peppers, spinach and tomatoes. I often start a large amount of this vegetable so that I can enjoy in different ways all week. With a stock of vegetable mix in the fridge, it only takes a few minutes to prepare this breakfast in the morning.
What distinguishes this recipe from the typical breakfast stacos is the addition of cottage cheese that I love. I am not sure why I’ve never thought of it. After all, I added my eggs to crumbled feta and goat cheese. The cottage cheese gives this vegetable-egg-scramble additional creaminess. It tastes deceptively decadent, but is actually a pretty healthy recipe.
This recipe can be easily doubled or tripled for a lot. You can also make an additional egg mixture to heat it and enjoy a short breakfast on the day of the week.
