Meals have something special that is made simply, heartily and with their favorite ingredients. Today I wanted to share one of my recipes for lunch with lunch: a delicious chicken sandwich made of sourdough bread (my absolute favorite!) Combined with a warm, cozy, roasted tomato basil soup.
It is the type of combination that feels like a hug in a bowl and on a plate: perfect for a relaxed afternoon or a quick, satisfactory dinner.
Sour dough is undoubtedly my favorite bread. It has this perfect balance between Tang and Kau and makes every sandwich taste a little chic and tasty.
What better suits a sandwich than with a bowl of rich, creamy soup? I roasted fresh tomatoes until they slightly caramelized and burst with taste. Then I combined the roasted tomatoes with boiled garlic, onions and fresh basil; Mix everything with a little chicken broth and let it simmer for a few minutes.
In the end, I stirred a cream with cream for the additional creaminess.
The result? A deeply tasty, slightly lively and Herby soup that heats her from the inside out.
Why I love this food
This combination is light but fulfilling, calming, but not difficult and so easy to whip on a strenuous day. Regardless of whether you have it for lunch or dinner (or as I call it a “Lunner”), it hits the place every time.

As I enjoy this, I love to separate the crispy sourdough chicken sandwich into the warm tomato basil soup. Let me tell you, it tastes absolutely delicious! The crispy edges enjoy just enough of this velvety soup and make every bite even more calming.

- Chicken without bone- 2 chicken breast
- Ground black pepper ¼ tl
- Ground paste ½ tl
- Salt -anc TL
- Sourdough bread
- Basil Pesto spread
- Spinach leaves
- Mozzarella cheese, crushed
- Butter- 1 el/sandwich
- I used chicken breast without bones. Half of the chicken breast vertical.
- I added spices like ground allspice, ground black pepper and salt.
- Any type of spices and spices can be added.
- Spread the spices over the chicken and let marinate for 10 minutes.
- Add the marinated chicken to a saucepan, add 2 tablespoons of water and cooking until the chicken is well cooked and the liquid has dried.
- Or you can grill or roast the chicken.
- My favorite bread is sourdough bread for the production of sandwich.
- Spread the bread slices with basil mumpesto. Or use one of your favorite flows.
- Put 2 cooked chicken pieces on one of the bread slices. If you prefer it, you can also chop the chicken slightly.
- Expose the chicken with 4 spinach leaves.
- Top with grated cheese. Or use cheese slices.
- Close with the other bread slice.
- Press the sandwich with chopped butter or spread it with melted butter.
- I grilled the sandwich on a Panini manufacturer until Golden & Crispy.
- If you don’t have a Panini manufacturer, you can roast the sandwich on a pan that is placed over medium heat until both sides become golden and crispy.
- I strongly recommend using sourdough bread to make this sandwich tastes delicious.

- Garlic, cut 2 cloves
- Onion, chopped- 1
- Dried red chilli flakes ½ tl
- Fresh basil leaves- 10 leaves
- Chicken broth- 2 cups
- CREME 2 tablespoons, optional
- This is a simple recipe with minimal ingredients.
- I roasted the tomatoes in an air fryer.
- Half of the tomatoes (I took Roma tomatoes), season with ground black pepper and salt.
- Air roast or bake the tomatoes at 400 ° F or 200 ° C for 25 minutes to form light gold brown stains on tomatoes.
- Place a wide pan over medium heat and give ½ tablespoon butter.
- Add the garlic, fry for a minute.
- Add the onion and dried red chilli flakes, fry the onions throughout.
- Add fresh basil leaves, combine well.
- Add the roasted tomatoes.
- Add chicken broth or vegetable stock, combine it well.
- Cook for a few minutes.
- Take the pan out of the heat, let yourself be cooled a little.
- Transfer the soup into a mixing glass and puree it smoothly.
- Transfer the pureed soup back to the pan and cook for a few minutes.
- Add cream and cook for a minute. Adding cream is simply optional.
- Serve the soup in a bowl and enjoy it while it’s warm.
