These simple, healthy carrot cake haven breakfast breakfasts make a short breakfast, a snack or a healthy dessert on the way! Made with zero refined sugar and drizzled with a delicious maple fresh cheese cheese.
Call all carrot cake lovers! You will love this cozy and delicious recipe for healthy carrot cake. I originally shared this recipe in 2017, but over the years I had some complaints that the bars were too crumbly and fell apart. So I tested this recipe a few times and tested again, made some effort and I love how you developed! I found that the use of quick princes instead of rolled oats contributed to holding the rods more together, which made it more cake -like and at the same time held its shape. Made from healthy ingredients and the Ahorn -fresh cheese rain on the cake is a literal icing!

Ingredients will need
- Faster oats -I used Bob’s Red Mill Schnellkoch-Här. Simply make sure that you are gluten-free if you manufacture GF bars. I do not recommend using an old -fashioned oat harbor in this recipe, since the measurements would be switched off because the fast oats are closer when measuring.
- Oatmeal – This helps make the bars easier and fits the oats perfectly. See notes below how you can make your own oatmeal. You can also use 1 to 1 gluten -free flour, whole grain flour or all -purpose flour. I do not recommend almond flour or coconut flour in these bars.
- baking powder – acts as a sourdough agent to help the poles.
- Carrot – You need a frequent cup of shredded carrots, about 2 medium carrots. Shred carrots with a box or a kitchen machine. Pre-Shed carrots from the grocery store also work.
- Egg – Add protein and give these beams their fluffy texture and size.
- Coconut oil – for additional moisture and fluffy! Feel free to replace with a different type of oil if you prefer it or even butter.
- Sweetener – I used a combination of maple syrup and cane sugar to sweeten these bars naturally without using sophisticated sugar. You can also use honey, coconut sugar or other natural sweeteners.
- Vanilla extract – Extra thrust of the taste.
- Warm spices – a combination of cinnamon, nutmeg and salt
Feel free to add some funny mixes such as raisins, chia seeds, chopped walnuts, pecans or other kinds of nuts that you prefer. You could even sprinkle them on the Ahorn fresh cheese to get a delicious pleasure!
How to make carrot cake -haferflocken -riegel
- Mix ingredients. Whisk the oatmeal, faster oats, baking powder, cinnamon, nutmeg and salt in a large mixing bowl. Whisk eggs, maple syrup, cane sugar, coconut oil and vanilla in a separate medium -sized bowl and are tied up until well. Pour the wet ingredients with the dry ingredients, add the shredded carrots and mix them until they are combined.
- Bake the bars. Pour the carrot cake dough into a prepared 8 × 8-inch backform, which is lined with parchment paper. Bake in the oven at 350 degrees ff for 25 to 30 minutes. Until the edges are golden brown or a toothpick introduced in the middle comes out clean. Let the carrot harvesters sit for 5 minutes, then remove from the pan and let it cool down completely on a rust.
- Make cream cheese sugar effusion. While the sticks cool down in the baking pan, add cream cheese, maple syrup, milk and vanilla extract into the bowl of a blender (or you can use an electric hand mixer) and whip up smoothly. Feel free to add more milk at once until you have your desired creaminess.
- Prepare the bar. Flow the healthy cream cheese over the bar as soon as they have cooled and cut into 16 pieces. Enjoy!
How to do your own oatmeal
To make your own oatmeal, just take an old -fashioned oat (or immediate oats) and mix in your food processor for about 60 seconds until you resemble a fine, powdery flour – and that’s it! Of course, you can simply buy your own oat meal in the shop, but this method saves you money and the flour takes up to three months in your pantry. The ratio for oatmeal is a cup of oats = a cup of oatmeal, so it is pretty easy to measure.
Preparation and storage
To save: You can be stored in a sealed, airtight container or wrapped in plastic foil in a sealed, airtight container 5 days In the fridge. I like to save you in a layer to prevent the cream cheese sugar effusion from being mixed up.
Freeze: These healthy bars also freeze really well! I recommend freezing the poles individually and pulling them onto it as needed. If you are ready to eat, simply place them in the microwave for 30 to 40 seconds or just place it at room temperature. These will stay in the freezer for the perfect snack for up to 3 months!

Whisk fast oats, oatmeal, baking powder, cinnamon, nutmeg and salt in a medium -sized bowl. Set aside.

Whisk the eggs, melted coconut oil, maple syrup, cane sugar and vanilla in a separate bowl. To meet well.

Pour the wet ingredients with the dry ingredients, add the grated carrots and mix everything until they are combined.

Pour the oat mix into a prepared 8 × 8-inch bustle and bake in the oven for 25 to 30 minutes or until a toothpick inserted in the middle comes out clean.

Let the carrot cake bars sit for 5 minutes, then remove from the pan and let it cool completely on a rust before cutting. If you cut you too warm, you can crumble more easily.

As the poles cool down, put cream cheese in a small bowl and heat the microwave for about 30 seconds. Add the maple syrup, a tablespoon of milk and 1/4 teaspoon of vanilla and whisk it until you are smooth. Feel free to add more milk to one teaspoon after the other until you get your desired consistency.
